The Meritage Resort & Spa presents an intimate prix-fixe dinner at Ember Steak to launch the Wild Game Series: Hooves experience, hosted by Chef Nicole Heaney on October 18. Limited seating ensures a personalized evening of culinary artistry. From October 18th through November 2nd, the Hooves menu will also be available nightly from 5:00 PM – 7:30 PM a la carte.
Hooves is inspired by Chef Heaney’s Wyoming roots. This quarterly series—Hooves, Fins, Feathers, and Claws—celebrates wild ingredients through open-flame cooking, transforming them into refined, daring dishes. Highlights include Braised Elk Tongue Tostada, Grilled Camel with aromatic spices, and Smoked Bison Short Ribs. Guests are invited to immerse themselves in this seasonal homage to the wild, savoring flavors that honor tradition, terroir, and culinary mastery.
