CIA Skills: Plant-Forward Mediterranean Cuisine at Copia offers a hands-on introduction to the vibrant, plant-rich flavors of the Mediterranean for adults 18 and over. Inspired by the orchards, markets, and coastal waters of Provence, Southern Italy, Spain, Greece, Turkey, and North Africa, this class teaches you how to create healthful, sustainable dishes featuring vegetables, legumes, whole grains, and plant-based proteins. Some animal proteins are also included.

Learn techniques and recipes you can bring home to enjoy the bounty of the Mediterranean in your own kitchen.
